Our Mexico Single Origin hails from the legendary Chiapas mountain region, bordering tropical biosphere reserves near the Guatemalan frontier. Farmed at elevations exceeding 4,000 feet by smallholder family growers, these 100% Arabica beans are nurtured by rich volcanic soil and frequent mountain mists. We roast this lot to a lively light-medium profile that accentuates its delicate green apple brightness, sweet roasted almond undertones, and a remarkably clean brown-sugar finish that makes for an exhilarating morning eye-opener.

✨ TRY IT: Chiapas Cinnamon Orchard Pour-Over
Ingredients:
- 8 oz freshly brewed Mexico Single Origin Coffee (Pour-over or Drip)
- 1 light cinnamon stick placed in the server during brew
- 1 tsp raw agave nectar or cane sugar
- Slice of fresh green apple for rim garnish
Method: Place a cinnamon stick directly in your coffee carafe while brewing hot Mexico single origin coffee over it. Stir in a touch of agave nectar. The subtle cinnamon warmth highlights the natural crisp apple and pear acidity for a refreshing morning cup.
Extraction Tip: For light-medium roasts, use water heated to 205°F to ensure full extraction of the bright malic and citric fruit compounds. In a Chemex, a medium-fine grind yields a sparkling, tea-like clarity.
